NUTR& 101 - Nutrition Credits: 5 LEC hours per week: 5 This non-lab science course emphasizes the principles of nutrition and is primarily intended for Nursing or Allied Health majors in fulfillment of a nutrition requirement for pre-nursing or healthcare related program requirements; however, this course may also be used in fulfillment of a general education non-lab science requirement. Topics include: dietary recommendations for adults and various states of the human life cycle and the principles of nutrition as the apply to macro-nutrients and metabolic pathways. Formerly: NUTR 165. Prerequisite(s): Appropriate placement score or grade of C or higher in ENGL 087 ; or permission of the Division Chair or designee. Course Outcomes:
- Identify the key nutrients and their basic functions in the body.
- Explain the origin, meaning, and use of Dietary Reference Intakes as established by the National Academy of Sciences.
- Select foods or groups of foods that provide a source of each key nutrient in significant amounts.
- Recognize that foods must be digested into nutrient components and presented to the cell for utilization.
- Identify changes in the nutritional requirements for persons in various stages of the life cycle.
- Recognize some of the problems involved in modifying food consumption habits.
- Recognize and use the dietary recommendations for healthy adults.
- Interpret information found on food labels.
- Recognize differences between reliable and unreliable sources of nutritional information.
- Understand a Food Intake Record and then show proficiency in analysis of the record.
