EV 203 - Science of Winemaking I Credits: 3 LEC hours per week: 2 LAB hours per week: 2 This is an advanced enology course open only to students enrolled in the Enology and Viticulture program. Topics include winemaking principles such as fruit selection, pre-harvest analyses, fruit processing, juice additions, alcoholic and malolactic fermentations, as well as winery hygiene and safety. Prerequisite(s): Instructor permission. Grade of C or higher in EV 120 , AMATH 105 or higher and EV 102 and/or Director Permission. Course Outcomes:
- Prepare pre-harvest fruit and juice samples.
- Analyze pre-harvest fruit and juice samples.
- Model proper techniques of winery safety and sanitation processes.
- Differentiate the techniques of red, white, and rosé wine grape processing.
- Explain alcoholic and malolactic fermentations.
- Calculate amounts of required compounds for juice and wine additions.
- Perform juice and wine addition tasks.
